Résumé
The development of innovative fermentation processes requires access to new microbial resources characterised by the latest technological advances. CollectiFF aims to develop a large collection of mesophilic starters for sustainable plant fermentation. We will sample under-explored environments and food products to isolate rare yeast and bacterial species. The sampling process will ensure that intellectual property rights and commercial uses of the strains are respected to encourage industrial developments. Strains will be isolated on plant-based media at medium-low temperatures to optimise energy consumption in plant fermentation processes. Genomics will ensure accurate taxonomic positioning and facilitate further selection for specific applications. In addition, we will obtain targeted phenotypic properties by measuring growth capacity on selected sugars and perform intra- and extracellular metabolomic analyses relevant to high-throughput plant fermentation. The data set will be integrated in accordance with FAIR principles and QC procedures. The project will ultimately provide a collection of 500 strains with comprehensive taxonomic, phenotypic and multi-omics data. Overall, CollectiFF will develop procedures for the efficient deployment of delocalised culturomics platforms, in close interaction with the GDFF data group. The collection and its associated dataset will be a valuable asset for research and applications in the field of sustainable plant-based fermentation.
