Résumé
There is an urgent need to develop healthier and more sustainable foods in the context of global warming. Legume
production supports sustainable agriculture, and microbial fermentation of legume-based products can improve
nutritional quality and reduce consumption barriers. In the Groenlac project, we will investigate the potential of
environmental lactococci as starters grown in a soy-based juice, selected as a model matrix. We will identify links
between bacterial proteins required for growth in this matrix and growth performance. Project results should assess
their potential as innovative starters and facilitate their rational exploitation to improve the nutritional quality of
legume-based fermented matrices.
