Résumé
DIVERGENCE aims at providing a tool or criteria to evaluate the safety of bacterial strains
belonging to a species with a long history of use in fermentation, when implemented in new
fermentation processes, new food matrices/substrates, or for new applications (hereafter
novel/unusual conditions of use) for which there is no hindsight on their safety. This decision
support tool will be based on the comparison of the behavior of a strain under these
novel/unusual conditions of use with the variability of the behaviors of the species under
traditional (standard) conditions of use. An absence of difference in behavior under the
novel/unusual condition of use, considered then as substantially equivalent, would be
interpreted as a guarantee of safety. On the contrary, a significant divergence would reflect
atypical behavior, which could be perceived as a potential risk. In order to provide a proof of
concept and develop the tool/criteria to assess strain safety in novel conditions of use, the
present work will be carried out with Streptococcus thermophilus (STH), a species with a welldocumented
use in dairy fermentation and the GRAS status in these applications. Once proof
of concept will be established, such a tool could be applied to other species such as more
genetically diverse food species (eg Lactobacillus plantarum) and species with ambiguous
safety status (Enterococcus faecium, Lactococcus piscium) that are used in food fermentation
and bio-preservation.
